
Tongan raw fish ceviche: fresh sashimi-grade tuna or snapper cubed and briefly cured in lime juice, then dressed in coconut milk with onion, chili, and salt. Simpler than the Samoan or Tahitian versions — Tongan 'ota ika is essentially fish + lime + coconut + salt + onion, with chili added at the table.
'Ota ika is the universal Tongan everyday fish dish — sold at every market, made in every household. The simplicity is intentional: Tongan cooking emphasizes fresh ingredients in clean preparations. Unlike Fijian kokoda which includes tomato and cucumber, 'ota ika keeps the focus on the fish itself. Sold in coconut-shell cups at Talamahu Market in Nuku'alofa.
Spoon up 'ota ika — pearly tuna cubes coated in creamy coconut, lime-bright, gently salty. Simpler than Samoan or Fijian variants; the fish flavor dominates. Optional chili adds slow heat. Cooling, clean, Tongan.
Lime acid (pH 2.5) denatures fish surface proteins; coconut milk fat coats and emulsifies. Brief 5-8 min cure is critical — the Tongan preference is for the fish to retain its raw center.
Variations
Octopus 'ota ika uses cooked octopus. Mixed 'ota ika uses several fish. Spicy version doubles chili.
