Cachupa refogada (also called cachupa guisada) is the Cape Verdean signature breakfast made from leftover cachupa. The dish is the universal Sunday morning meal across Cape Verde and the diaspora.

Take a forkful of cachupa refogada with egg — chunky stewed cachupa now crispy-edged from pan-frying, slices of mahogany chouriço, golden caramelized onions, the bright orange yolk of a runny egg breaking over everything.     Drain 800 g leftover cachupa (cold from refrigerator) — discard excess liquid.
