Tinkhobe netinkobe is the Swati version of the Southern African samp-and-beans tradition — the universal carbohydrate-protein one-pot meal of Bantu Africa.

Spoon up tinkhobe netinkobe — creamy samp kernels with soft beans, the cooking broth thickened by the released starches. Bite: samp's chewy corn body, beans' creamy melt, the onion-garlic seasoning binding everything. Sustaining, plain, deeply ancestral. With a side of slambu greens, this is the everyday Swati plate.

Soaking both separately overnight equalizes cooking time. Long slow simmering tenderizes the tough samp kernels. Salt added late prevents bean skins from toughening.

    Soak 250 g dried samp and 250 g dried sugar beans separately overnight.

    Watch out

    Simmer low and slow until a samp kernel and a bean both mash easily against the pot — rushed on high heat and the samp stays chalky in the center.

    Add 1 chopped onion, 2 minced garlic cloves, 1 tsp salt in last 30 min.

    Salt only in the last half hour — add it early and the bean skins turn tough and papery.
