
Sheftalia are the defining Cypriot grill sausage, distinguished by being wrapped in caul fat (panna) rather than stuffed into a casing. The caul melts on the grill, basting and crisping the meat.
Bite a sheftalia and the caul has crisped into a thin lacework over a juicy, cinnamon-warmed core of pork and lamb. The fat has largely melted away, basting the meat from inside, so it is rich but not heavy, fragrant with onion and parsley. Wrapped in warm pita with raw tomato and lemon, it is the smoky soul of the Cypriot grill.
Caul fat is the key: as it heats it renders, basting the lean mince from within and crisping into a delicate shell, doing the job of both a casing and added fat. Squeezing the onion dry keeps the mix from steaming; resting lets the caul firm so the sausages hold on the grill.
