Sheftalia

Medium·35 min active + 25 min resting

Cyprus's caul-wrapped grilled sausages — minced pork and lamb mixed with onion, parsley, and cinnamon, wrapped in lacy caul fat (no casing) and charcoal-grilled until the fat crisps and bastes the meat.

Sheftalia are the defining Cypriot grill sausage, distinguished by being wrapped in caul fat (panna) rather than stuffed into a casing. The caul melts on the grill, basting and crisping the meat.

Bite a sheftalia and the caul has crisped into a thin lacework over a juicy, cinnamon-warmed core of pork and lamb. The fat has largely melted away, basting the meat from inside, so it is rich but not heavy, fragrant with onion and parsley. Wrapped in warm pita with raw tomato and lemon, it is the smoky soul of the Cypriot grill.

Caul fat is the key: as it heats it renders, basting the lean mince from within and crisping into a delicate shell, doing the job of both a casing and added fat. Squeezing the onion dry keeps the mix from steaming; resting lets the caul firm so the sausages hold on the grill.

Variations

All-pork. With added mint. Spiced with cumin. Pan-fried when caul is unavailable (formed as patties). Served on a meze platter. With grilled halloumi alongside.

How it's made

8 steps · 35 min active + 25 min waiting

  1. 1
    5 min

Rinse 150 g caul fat in lukewarm water with a splash of vinegar; spread flat.

  2. 2
    8 min

Mix 400 g minced pork with 200 g minced lamb, 1 grated onion (squeezed dry), chopped parsley, 1/2 tsp cinnamon, salt, and pepper.

    Watch out

Squeeze the grated onion bone-dry before mixing — leftover onion water makes the mince steam on the grill instead of browning, and the sausages go loose and grey.

  3. 3
    6 min

Knead well and shape into small fat sausages.

  4. 4
    8 min

Cut the caul into squares; wrap each sausage in a square, folding to enclose.

  5. 5
    20 min

Let the wrapped sheftalia rest 20 min so the caul sets.

    Watch out

Let the wrapped sausages rest until the caul fat firms and clings tight — skip this and the caul loosens on the grill and the sheftalia fall apart.

  6. 6
    14 min

Grill over medium charcoal 12-15 min, turning, until the caul crisps and the meat is cooked.

    Watch out

Grill over steady medium coals, turning often, until the caul webbing melts away to a thin crisp shell and the fat dripping flares gently — rushing it over high flame chars the caul while the middle stays raw.

  7. 7
    3 min

    Warm pita on the grill.

  8. 8
    4 min

Serve in pita with sliced tomato, onion, parsley, and a squeeze of lemon.
