Cyprus's signature charcoal feast — fist-sized chunks of pork (or lamb) marinated in lemon and herbs, threaded onto a long souvla skewer and slow-turned high above glowing coals for over an hour until crusted outside and juicy within.

Souvla is the Cypriot Sunday and celebration centerpiece, distinct from the smaller Greek souvlaki: the meat is cut large, cooked slowly and far from the coals on a rotating skewer (the souvlarka).

Pull a chunk of souvla and the crust is mahogany and smoky, the inside still pale and dripping. Bite: the slow heat has rendered the fat and kept the meat astonishingly juicy, deeply seasoned with lemon and oregano, the char adding a charcoal-sweet edge. No marinade trickery, just patience over embers. With lemon, fresh flatbread, and a village salad, it is the Cypriot Sunday.

Large chunks and a high, indirect position over embers (not a hot flame) cook the meat slowly like a rotisserie, rendering fat and retaining moisture while a crust forms — the opposite of fast, small souvlaki. Lemon and oregano season without tenderizing into mush.

Variations
