Bake a plain sponge: beat 4 eggs with 120 g sugar, fold in 120 g flour, and bake at 180°C for 22 min; cool.

Make a rum syrup: simmer 200 g sugar with 200 ml water, a cinnamon stick, and cloves, then stir in 80 ml rum off the heat.
Watch outStir the rum in only after the syrup comes off the heat — boil it and the alcohol and its perfume cook right off, losing the dessert's signature note.

Make atolillo custard: cook 500 ml milk with 4 egg yolks, 80 g sugar, 2 tbsp cornstarch, and cinnamon until thick.
