A robust, spicy cured sausage from Slavonia, made from prime minced pork seasoned heavily with hot and sweet paprika and garlic, with no black pepper. Slowly smoked and air-dried for months, it is sliced thin as a prized appetiser.

Slavonski kulen is an EU-protected (PGI, registered 2017) paprika-cured pork sausage from Croatia's Slavonia plain, with a tradition of over 200 years. It is made during the Nov-Mar pig-slaughter season, stuffed into the pig's caecum, cold-smoked and then matured for over six months. The red paprika and the long cold-smoking give it its deep colour and slow heat.

Dense and deeply savoury, each thin slice delivers a slow, building heat from the paprika and a pungent hum of garlic. Months of drying concentrate the pork into a firm, marbled, intensely flavoured bite. It is rich, smoky and unapologetically bold.

Salt and paprika draw out moisture and inhibit spoilage while smoke and slow fermentation develop tangy, complex flavour. Long drying concentrates proteins and fat, firming the texture and deepening the taste.

    Select prime lean pork and back fat from a mature pig.

    Mince the meat coarsely and chill it well.

    Mix thoroughly with plenty of hot and sweet paprika, garlic and salt, omitting black pepper.

    Stuff the seasoned meat firmly into wide pork casings, packing out air pockets.

    Watch out

    Pack the meat in firmly and work out every air pocket — trapped air is where mould and spoilage start during the long dry.

    Tie the casings and prick them to release trapped air.

    Cold-smoke the sausages over hardwood for several weeks.

    Hang to air-dry and mature in a cool, ventilated place for many months.

    Once firm and a noble mould has formed, slice thinly to serve.

    Watch out

    It's ready only when firm through and dressed in a pale, even bloom of noble mould — patchy dark or slimy growth means it went wrong.
