Pavê Brazilian

Easy·30 min

A no-bake Brazilian icebox dessert of biscuits soaked in milk or coffee, layered with a rich condensed-milk custard and topped with chocolate or whipped cream. A festive table staple, especially at Christmas, beloved for its soft, spoonable layers.

A Brazilian take on trifle and tiramisu; layered soaked-biscuit cream desserts appear in Brazilian recipe books from the early 20th century.

Spoon through cool, cloud-soft layers where the biscuits have melted into the cream until you can barely tell them apart. Vanilla and chocolate swirl together, sweet and milky with a faint coffee whisper. It melts away cleanly.

Milk-soaked biscuits absorb moisture and soften into a cake-like texture overnight, while the custard's gelatinised starch and egg set into stable, sliceable layers when chilled.

How it's made

8 steps · 30 min

  1. 1
    12 min

Cook a custard of condensed milk, milk and egg yolks until thick, then cool.

    Watch out

Stir the custard over gentle heat until it coats the spoon and a finger leaves a clean line — undercooked it never sets into sliceable layers.

  2. 2
    5 min

Whip cream and fold it gently into the cooled custard for a light base.

  3. 3
    5 min

Make a separate chocolate cream by melting chocolate into part of the custard.

  4. 4
    4 min

Quickly dip plain biscuits in milk so they soften but do not fall apart.

    Watch out

Dip the biscuits in and out fast — a second too long and they turn to sludge instead of a soft cake layer.

  5. 5
    2 min

Line a glass dish with a layer of soaked biscuits.

  6. 6
    4 min

Spread alternating layers of vanilla and chocolate cream over the biscuits.

  7. 7
    4 min

Repeat the biscuit and cream layers, finishing with a smooth cream top.

  8. 8
    240 min

Refrigerate at least 4 hours so the layers meld before serving.

    Watch out

Chill at least four hours, ideally overnight — the biscuits need that time to drink the cream and soften into cake before you slice.
