A Tagalog dish whose name means 'garnish,' palabok is regarded as an authentically Filipino noodle invention rather than a Chinese import, closely related to the thicker Pancit Malabon.

The noodles are slippery and soaked in a savory, faintly sweet shrimp gravy, while the toppings deliver crunch, smoke, and richness in every forkful. A squeeze of calamansi cuts through with bright, sour lift.

Annatto-infused oil and shrimp stock give the cornstarch-thickened sauce its signature color and umami depth without overpowering heat. Cornstarch creates the clingy, glossy gravy that coats each strand evenly.
