
Paska is the crowning bread of the Ukrainian Easter table, its name echoing Pascha, the feast of the Resurrection. After the long Lenten fast it marked the return of eggs, butter and milk to the kitchen, and the loaf's lofty crowned shape and decorations carried Christian symbolism layered over far older spring-bread traditions.
Light, feathery and faintly sweet, with a delicate eggy richness and little bursts of plump raisin. The crust is thin and deep gold, and the optional sugar glaze adds a sweet, melting finish to each tall slice.
A generous dose of yolks and butter enriches the dough so it bakes feathery and tender despite its height. Multiple long proofs develop the gluten and gas needed to lift such a tall loaf without collapsing.
