Forever linked to King Henri IV, who is said to have wished that every French peasant could afford a chicken in the pot every Sunday, poule au pot became a symbol of homely abundance. Especially beloved in the Béarn region of his birth, the dish turns one bird into a complete meal: a clear nourishing broth followed by moist poached chicken and sweet vegetables.

First comes the broth: clear, golden and deeply savoury, tasting of long-simmered chicken and sweet vegetables. Then the meat falls tender from the bone, mild and juicy, brightened by a sprinkle of coarse salt and the soft, broth-soaked carrots and leeks alongside.
