Omelette norvégienne is the French name for what English speakers call baked Alaska: a dome of rock-hard ice cream set on a disc of liqueur-soaked sponge cake, sealed completely in a thick coat of sweet meringue, then either flashed in a very hot oven or flambéed until the meringue browns while the ice cream inside stays frozen solid. The trick is pure physics — the air-filled meringue and sponge insulate the frozen core so well that a brief blast of intense heat caramelises the surface before it can melt the centre. Served at the table, often set alight with warmed Grand Marnier, it delivers a startling hot-and-cold contrast in a single spoonful. It is a fixture of French grande cuisine and a classic dessert of festive menus.

The dessert rests on a genuine piece of science: around 1804 the American-born physicist Benjamin Thompson, Count Rumford, investigating heat conduction, established that stiffly beaten egg white is a remarkably poor conductor of heat — a near-perfect insulator full of trapped air. The most-cited French account holds that a chef named Balzac at the Grand Hôtel in Paris turned this principle into a showpiece dessert for the 1867 Exposition Universelle, and that the playful name 'omelette norvégienne' (Norwegian omelette) arose from a geographical slip — Norway standing in for cold and snow. These inventor stories are contested folklore: precise attribution is disputed and should be treated as legend, though the Rumford insulation principle and the 1867 Paris framing are well documented. The dish crossed to the United States, where chef Charles Ranhofer of Delmonico's in New York is credited with the parallel 'Baked Alaska,' originally dubbed 'Alaska, Florida,' naming it for the 1867 U.S. purchase of Alaska from Russia.

The first spoonful is all contrast: a warm, lightly browned meringue shell — marshmallowy and just crisp at the caramelised edges — gives way to a shock of firm, ice-cold cream, with a thin band of liqueur-soaked sponge underneath. The meringue is sweet and airy, the centre dense and frigid, and a whiff of Grand Marnier or rum hangs over the burned-sugar surface. Hot and cold collide in one mouthful — that single sensation is the whole point of the dish.

Everything hinges on insulation. Meringue and sponge cake are both riddled with tiny air pockets, and still air is a very poor conductor of heat (the same reason foams insulate), so they form a barrier that dramatically slows heat reaching the frozen core. When the sealed bombe meets a very hot oven (roughly 200–250°C for a few minutes) or a blowtorch, the surface sugars brown by the Maillard reaction and caramelisation long before the heat can penetrate to the ice cream — provided you work fast and pull it out the moment it colours. Two conditions are non-negotiable: the ice cream must be frozen rock-hard, and the meringue must seal the assembly completely, with no gaps, since any exposed edge lets heat shortcut straight to the centre. A flambé of warmed Grand Marnier, rum, or kirsch poured over and lit adds theatre — the spirit's alcohol vapour ignites and burns off, leaving a thin caramelised, faintly boozy finish. The classic failure is melted ice cream from gaps in the meringue or heat that lingers too long.

Variations

The two great forms are the flambéed version (omelette norvégienne flambée), set alight at the table, and the oven-browned baked Alaska. The ice cream core ranges from plain vanilla to a fruit sorbet centre or a multi-flavour layered bombe, and the sponge is commonly soaked in Grand Marnier, kirsch, or rum. It is made either as one large dome to carve or as individual portions, and the French also call it 'omelette surprise.' Its American twin, 'Baked Alaska,' was named at Delmonico's in New York for the 1867 Alaska purchase — a documented parallel naming of the same dessert.

    Bake or buy a thin sponge cake (génoise) and cut a base slightly larger than your ice-cream mould; brush it generously with Grand Marnier and chill.

    Pack softened vanilla ice cream firmly into a dome mould lined with cling film, smooth the top, and freeze until rock-hard, at least 3 hours or overnight.
