
The foundational French egg-white sweet: whipped egg whites and sugar piped into shells or shapes and dried in a low oven until crisp through. Baked plain (meringue française), the result is a brittle, snow-white shell — hollow and crackly outside, faintly chewy within. Two crisp shells are classically sandwiched with whipped Chantilly cream to make a meringue Chantilly. It is the simplest expression of the egg-white-and-sugar foam that underpins much of pâtisserie, from soufflés to macarons to floating islands.
Meringue is built on the discovery that egg-white protein can be whipped into a stable sugar-laden foam — a technique documented in European cookery from the 17th century onward, with the name appearing in French in the early 18th century. The popular tale crediting a Swiss pastry cook named Gasparini in the town of Meiringen is unverified folklore, often repeated but not established as fact. What is settled is the codification of three methods in classical French pâtisserie: the raw French meringue, the warmed Swiss meringue, and the cooked-syrup Italian meringue. Each whips whites and sugar to a different stability, and each anchors a family of desserts — vacherins, soufflés, mousses, and buttercreams among them.
The shell crackles and caves at the first press, shattering into brittle, sugary flakes that melt on the tongue with a clean, intense sweetness. Just under the crust the center can be left barely soft and marshmallowy or dried all the way to airy crispness, depending on the bake. Sandwiched with cream, the contrast is the point: the meringue dissolves to nothing while the cold Chantilly stays soft and barely sweet. It should be pure white with no browning — color means the oven was too hot.
Whipping unfolds egg-white proteins, which trap air into a foam; sugar dissolves into the water phase and stabilizes the bubble walls, giving the gloss and stiffness. The cleaner the bowl of any fat, and the more fully the sugar is dissolved, the more stable the foam — a trace of yolk or grease will stop it whipping. Baking is really drying: a low oven (around 90–100°C) drives off water slowly so the structure sets crisp without browning, since the goal is to dehydrate rather than to caramelize. Too hot and the sugar colors and the shell cracks and weeps; too humid a day and it never fully dries. A little acid (cream of tartar or lemon) helps stabilize the foam against over-whipping.
Variations
Meringue française (raw whites, the everyday version, best dried not browned); meringue suisse (whites and sugar warmed over a bain-marie, denser and used for decorations); meringue italienne (hot sugar syrup beaten in, the most stable, used for mousses and to top lemon tarts). The shells build into a vacherin (meringue, cream, and fruit), the chestnut Mont-Blanc, and the crushed-meringue Eton mess; piped small they become petits fours; folded with almonds they approach the macaron and dacquoise.
