Grey shrimp (Crangon crangon) have been fished along the West Flanders coast for centuries. The horseback shrimp fishing tradition at Oostduinkerke was inscribed on UNESCO's Intangible Cultural Heritage list in 2013. The modern tomato-and-shrimp presentation took shape in Belgium through the mid-20th century and is documented in classic compilations of Belgian recipes, including Jacques Andrieu Delille's La Cuisine belge. Today the dish is served across the country—from Brussels brasseries to seaside cafés in Ostend—and is recognised by Belgian food writers as a defining emblem of the national café table, with quality measured by shrimp abundance.

Cold, sweet, briny grey shrimp meet a cloud of creamy mayo inside a cool, acidic tomato shell—deceptively simple and unmistakably Belgian.
