Placki Ziemniaczane z Goulash

Małopolska·Easy·45 min active + 15 min resting

Polish potato pancakes topped with Hungarian-style beef goulash — a Kraków café classic. The crispy pancake soaks up the rich meat sauce.

This dish combines two Central European staples: Polish placki ziemniaczane (potato pancakes) and Hungarian goulash. The combination is particularly associated with Kraków, where the proximity to the Hungarian border influenced the cuisine. The 'placki po węgiersku' ('potato pancakes Hungarian-style') is a recognized dish in Polish gastronomy.

Three golden, lacy-crisp potato pancakes on a plate, drowning in a rich, paprika-red beef stew. The pancakes' edges are still crisp; their centers have softened under the sauce. Each forkful combines the pancake's fried-potato flavor with the goulash's deep, peppery meatiness.

The grated potato oxidizes quickly (turns gray-brown) due to polyphenol oxidase enzymes. Adding lemon juice or grated onion slows this. The starch in the grated potato acts as a natural binder — no flour needed. Frying at high heat (180°C) creates a lace-crisp exterior through rapid starch gelatinization and Maillard browning.

Variations

Some serve the goulash on the side; the pancake thickness varies; sweet versions exist (with apple or sugar).

How it's made

6 steps · 45 min active + 15 min waiting

  1. 1
    10 min

Grate potatoes and onion; squeeze out excess liquid.

    Watch out

Squeeze the grated potato really dry — its own starch is the only binder, and any trapped water makes the pancakes soggy instead of lace-crisp.

  2. 2
    5 min

    Add egg, flour, salt; mix.

  3. 3
    15 min

Fry spoonfuls in hot oil until golden on both sides.

    Watch out

The oil must be properly hot so the edges go lacy and golden on contact — drop the batter into cool oil and it soaks up grease and stays pale.

  4. 4
    45 min

Make goulash: brown beef with onion; add paprika, stock; simmer 45 min.

  5. 5
    2 min

Plate 3 pancakes; ladle goulash on top.

  6. 6
    1 min

    Garnish with parsley.
