Cuban capuchinos — small, cone-shaped sponge cakes soaked in syrup, flavored with lime zest and vanilla. A relic of Spanish colonial pastelería.

Capuchinos are a relic of Cuba's Spanish colonial pastelería tradition. The name refers to the Capuchin friars whose robes' color (brown) matches the cakes' caramelized exterior. The cone shape comes from special metal molds. The syrup soaking is intense — the cakes are nearly saturated.

A small, cone-shaped cake, dark golden and glistening with syrup. The texture is dense, moist, and almost custardy from the syrup saturation. The flavor is caramel-sweet with a bright lime-zest finish.

The syrup (made by boiling sugar with water and lime zest) is absorbed by the warm sponge through capillary action. The high sugar content preserves the cakes for days at room temperature. The lime zest's essential oils provide aromatic contrast to the syrup's sweetness.

Variations

Some use cinnamon instead of lime; the syrup strength varies; traditionally made in metal cone molds.
