Torticas de Morón originate from the town of Morón in Ciego de Ávila province. They are one of Cuba's most recognizable regional sweets — simple shortbread cookies that have been made the same way for generations. The lime zest is the Cuban touch on an otherwise European-style shortbread.
A pale, round, slightly thick cookie that crumbles on the first bite. The texture is sandy and buttery; the flavor is sweet with a bright lime-zest finish and warm vanilla.
The high butter-to-flour ratio (like all shortbread) creates a tender, crumbly texture by coating flour particles with fat, preventing gluten formation. The lime zest's essential oils (limonene) provide aromatic brightness that elevates the simple cookie.
