The bhorta technique transforms this sweet, watery vegetable into a concentrated, flavorful mash by boiling it, draining it thoroughly, and pounding it with pungent mustard oil, raw aromatics, and dried shrimp. It is the food of frugality and ingenuity — making something extraordinary from the most ordinary ingredient.
