Sorghum-based grain spirit, 40-65% ABV, fermented with qu mold cake. China's defining hard liquor — savory, funky, fierce.

Distilled spirits emerged in China by the Yuan (Li Shizhen's Bencao Gangmu, 1578, says shaojiu began with the Yuan). The defining brands codified in the Qing: Maotai (1704, Renhuai), Fenjiu (Apricot Blossom Village, traceable to 1500 BCE Shang ritual wine), Wuliangye (1909, Yibin). Annual production ~7 billion liters, the world's largest spirit category by volume.

Twelve official aroma categories (GB/T 17204-2008): jiang (酱, Maotai), nong (浓, Wuliangye), qing (清, Fenjiu) are the big three. A bottle of 1980s Feitian Maotai sold for ¥1.32M at China Guardian 2018. Henry Kissinger's 1972 Beijing toast with Zhou Enlai used Maotai; Nixon's daughter Tricia got handed a bottle.

Clear as water, nose hits before the glass reaches the mouth — soy-sauce, overripe pineapple, cellar-mold, hot solvent. Body oily, savory, the burn arrives at the back of the throat and stays. Drunk in 25-50ml ganbei shots at meals, never sipped alone, never on ice.

Solid-state fermentation in earthen pits or ceramic jars: cooked sorghum + qu (a brick of wheat or barley inoculated with mixed Aspergillus, Rhizopus, yeast) ferment 30-90 days, then steam-distill the solid mash directly in pot stills. Multi-round (Maotai: 7 rounds over 1 year, then 3+ years aging) builds the complex ester profile.

Jiangxiang (酱香, Maotai/Langjiu, sauce-like), Nongxiang (浓香, Wuliangye/Luzhou Laojiao, oily-sweet), Qingxiang (清香, Fenjiu, clean), Mixiang (米香, Guilin Sanhua, rice base), Fengxiang (凤香, Xifeng, Shaanxi hybrid), and Erguotou (二锅头, Beijing bran-qu / fuqu qingxiang).

    Watch out

    Pile the sorghum-and-qu mix warm, not hot, into the pit — too hot kills the mold and yeast before solid-state fermentation can even start.

    Cut the distillate by quality as it runs — the harsh heads and weak tails come off separately, and only the clean heart-cut goes to aging.
