
Karkanji (also called bissap or sobolo in West Africa, agua de jamaica in Mexico) is the universal Sahelian-region hibiscus drink, made from dried Hibiscus sabdariffa calyces. Refreshing, vitamin-C-rich, deeply red.
Pour a glass of karkanji over ice — deep ruby-red liquid, sweet-tart aroma, mint sprig floating. Bring 2 L water to a boil in a heavy pot.

Add 80 g dried hibiscus calyces, 1 thumb grated ginger, 3 cloves; reduce to medium.

Stir in 200 g sugar (or to taste) while still hot until dissolved.
