
Trdelník was known as a Slovak dish by the mid-19th century; 'Skalický trdelník' was registered as an EU Protected Geographical Indication in 2007, tying it to Skalica.
The caramelized sugar shell crackles and shatters, sticky-sweet and toasty from the coals, with walnuts adding warm crunch. Inside, the dough is soft, faintly eggy and pleasantly chewy. Eaten warm off the spit, the contrast of crisp crust and tender hollow center is irresistible.
Rotating the dough over coals cooks it evenly while caramelizing the surface sugar into a crisp, amber crust through pyrolysis. Winding around a roller creates the hollow chimney shape and a high surface-to-dough ratio for maximum crispness.
