Lyulya (lülə) kebab is a staple of the Azerbaijani grill, shared across the South Caucasus; it is mutton, herbs and spices kneaded with grated onion and tail fat, squeezed around a flat skewer and barbecued over charcoal, then served wrapped in lavash with onions and sumac.

The exterior chars into a smoky, savory crust while the inside stays remarkably juicy and tender, almost springy from the long kneading. Wrapped in soft lavash, the bite turns tangy and bright thanks to raw onion and a generous shake of lemony sumac.

Hard kneading develops the meat's proteins so the paste clings to the skewer without binders, and the high fat content bastes the kebab from within as it cooks over direct charcoal heat.
