
Pigeon-rearing is one of Egypt's oldest traditions, and the mudbrick dovecotes (abraj el hamam) that rise like beehives over Nile Delta villages have fed the country since pharaonic times. Hamam mahshi is the celebratory centrepiece of weddings and special gatherings, prized for the nutty freekeh stuffing that soaks up the bird's juices, and serving it is considered a gesture of deep hospitality.
The skin shatters into crisp, ghee-scented shards over meltingly tender dark meat. Inside, the smoky-nutty freekeh is plump with savory juices and warm with cinnamon.
Simmering first gently cooks the lean pigeon and hydrates the dense freekeh evenly without scorching, while the final dry-roast drives off surface moisture so the skin can crisp through Maillard browning. Freekeh, harvested green and fire-roasted, contributes its signature smoky aroma.
