
Legim grew out of the African cooking traditions carried to Haiti by enslaved people, who transformed humble garden vegetables into one rich, slow-cooked pot. In rural households it became the Sunday dish, simmered for hours until the vegetables surrendered their shape, and it remains a marker of a cook's patience and skill across the country.
Spoon-soft and almost velvety, with the smoky depth of long-braised beef threaded through earthy eggplant and bitter greens. Each bite is layered and slightly sweet, the kind of stew that tastes like it took all day — because it did.
Long, gentle braising breaks down the vegetables' cell walls so they collapse into a unified puree, while the beef's collagen melts into gelatin that thickens the stew and carries fat-soluble aromatics from the epis.

Season beef chunks with epis (Haitian green seasoning), lime, salt and pepper, then sear in oil until browned.

Add water and braise the beef gently until nearly tender, about 45 minutes.

Chop eggplant, cabbage, chayote, carrots, spinach and watercress; add to the pot with the beef.

Simmer covered until the vegetables are very soft, stirring occasionally, about 30 minutes.

Mash the softened vegetables against the side of the pot or remove and puree, then return to the pot.
