Fried carp owes its central place to Catholic fasting rules, which forbade meat on Christmas Eve but permitted fish. Carp thrived in the great medieval fishponds of South Bohemia, dug by monasteries and nobles since the 14th century, making it abundant and affordable for the holiday. To this day live carp are sold from tubs on Czech street corners in the days before Christmas, and the fried fillet with potato salad is the unshakeable taste of the Czech Štědrý den.

The crust crackles into the steam of flaky white carp, mild and clean with a squeeze of lemon. Against the cold, tangy richness of the potato salad it is pure festive comfort, the flavor every Czech associates with December 24th.
