Chingri bhape (steamed prawns) is a Bengali coastal preparation, particularly from the Khulna-Barisal delta, where prawns and mustard are abundant. The technique is the same as ilish bhapa: prawns are coated in a paste of ground mustard seeds, grated coconut, green chilies and mustard oil, then sealed and steamed. The steaming preserves the prawns' delicate sweetness while the mustard paste infuses them with its pungent aroma. The dish is simpler and faster than a curry, and it highlights the quality of the prawns. Eaten with steamed rice, chingri bhape is a celebratory dish when large tiger prawns or golda chingri are available.

Tender, sweet prawns infused with the pungent aroma of mustard and the faint sweetness of coconut, the flesh moist from steaming. Each prawn is a clean, delicate bite, the mustard adding depth without overwhelming.

The technique is steaming in a sealed container with a mustard coating. The prawns are coated in a paste of ground mustard seeds, grated coconut, turmeric, green chilies and mustard oil. The coated prawns are placed in a heatproof dish, covered (traditionally with a banana leaf, then a lid), and steamed for 20 to 25 minutes. The sealed environment traps the aromatic steam, the mustard paste cooking into a sauce around the prawns. No water touches the prawns; they cook entirely in the steam of their own juices and the paste.

Variations

Some add poppy seed paste for richness. A version without coconut is sharper.

    Grind 3 tbsp mustard seeds with 50g grated coconut, 3 green chilies, turmeric and 2 tbsp mustard oil.

    Watch out

    Cover the dish tightly so no water touches the prawns — they must cook in their own steam and the mustard paste, which sets into the sauce.
