A decadently moist sponge cake smothered in a rich toffee sauce, often accompanied by custard or cream.

Popularized by Francis Coulson at the Sharrow Bay Hotel in the Lake District in the early 1970s, who claimed (probably correctly) to have it from a Mrs. Martin in Lancashire, who in turn had it from two Canadian airmen (Air Force officers) during WWII. The Canadian provenance explains the dates — sticky-date pudding is a Commonwealth recipe that traveled back to England.

Popularized by Francis Coulson at Sharrow Bay Hotel, Lake District, in the early 1970s — Coulson credited a Mrs. Martin in Lancashire, who got it from a Canadian airwoman during WWII. Date purée is load-bearing: dates supply both Maillard color and the moisture flour-and-butter cannot.

A small dark sponge, almost black-brown, soaked through with toffee sauce poured hot at the table. The sponge is dense from puréed dates, not dry; the sauce is butter, dark muscovado, and double cream cooked until it coats a spoon. Served with a pour of cold cream — the temperature contrast is the point. Eat fast; the sauce thickens as it cools.

Date purée is load-bearing: dates supply both the dark color (Maillard from natural sugars) and the moisture that keeps the sponge from drying — flour-and-butter alone can't do this. Muscovado over white sugar in the sauce matters too; molasses content gives the bitter edge that stops the dish from being cloying.

Variations

Sharrow Bay original (whole dates, dark muscovado); Cartmel Village Shop version sells thousands frozen weekly across the UK; pub-roast version often skips the date purée and shows it; ginger-pudding cousin uses fresh ginger instead of dates.
