Obwarzanek krakowski is a braided ring-shaped bread from Kraków — like a bagel but lighter, with a crisp crust and soft interior. Topped with poppy seeds, sesame, or coarse salt. Sold from street carts throughout Kraków's Old Town.
Obwarzanek has been baked in Kraków since at least the 14th century — records show it was served at the royal court. It holds EU PGI status (Protected Geographical Indication) since 2010. The ring shape (like a bagel) comes from the brief boiling before baking, which sets the crust.
A golden-brown braided ring, crisp on the outside, soft and slightly chewy inside. The poppy seeds add a nutty crunch. Lighter than a bagel, with a more delicate crumb. Best eaten fresh from the cart, still warm.
Obwarzanek uses the same boil-then-bake technique as bagels. The brief boiling (1-2 minutes) gelatinizes the surface starches, creating the crisp crust. The braided shape is formed by twisting two strands of dough into a ring. The interior stays softer than a bagel because the dough is less dense.
