Salata baladi ('country salad' or 'folk salad') is the most basic Egyptian side dish. 'Baladi' means 'of the country' or 'traditional' — it distinguishes this simple, everyday salad from more elaborate or foreign-influenced salads. Every Egyptian meal includes it.
A colorful bowl of bright red tomatoes, green cucumber, white onion, and parsley, all in small dice, glistening with lemon dressing. Fresh, crisp, and bright — a palate cleanser between bites of rich food.
The lemon juice's citric acid provides brightness and prevents the vegetables from oxidizing. The vegetables' high water content provides physical cooling. The parsley's essential oils (apiol) provide a fresh, slightly peppery aromatic note.
Variations
Some add radish or green pepper; the dressing is always lemon and oil (never vinegar).
