Huevos estrellados (or rotos, 'broken') is a staple of Castilian bar food and home cooking. The dish is essentially fried potatoes topped with fried eggs (sunny-side up) and jamón. The name comes from the way the yolks are 'smashed' (estrellados) by the diner, allowing them to run over the potatoes.
