Samfaina is the Catalan slow-cooked vegetable stew of eggplant, zucchini, peppers, tomatoes, onion, and garlic — the foundation of Catalan cooking. It is eaten on its own with bread, served alongside grilled meats and sausages, or used as a bed for rabbit and chicken dishes like rabbit with samfaina.
Samfaina is the Catalan cousin of ratatouille, of Mallorcan tumbet, of Spanish pisto — every Mediterranean coast has its version. The Catalan name traces back through old samfònia to the Latin symphonia (from Greek symphonia, 'symphony'), a fitting image for its harmony of vegetables. Each Catalan cook has a strict order for adding vegetables, the firmest first and the tomato last, so each keeps its character in the final stew.
Soft, glossy, almost jammy — each vegetable has melted into the others but kept its color. The eggplant is silky, the peppers sweet, the tomato tying it all together with bright acidity. Eat it warm with bread, mopping the olive oil from the bottom of the dish.
The vegetables are sautéed separately or in a careful sequence, so the firm ones (eggplant, peppers) soften fully while the soft ones (tomato) keep their shape. Eggplant is often salted first to draw out bitterness. The long, slow simmer in olive oil concentrates and sweetens all the flavors.
Variations
Some add potatoes; some finish with a sprig of thyme; the onion-to-tomato ratio varies; it can be served hot, warm, or at room temperature.
