Bacalao a la Casera belongs to the great Spanish Lenten tradition (cocido de Cuaresma), when meat was forbidden and salt cod with chickpeas became the substitute protein pair. The dish is from Castile, Madrid, and La Mancha — inland regions where salt cod arrived via the long trade from the Atlantic.
