The name most likely comes from the phrase "na lysti" (on a leaf), referring to the early practice of cooking thin pancakes on large cabbage leaves or baking sheets, not from "to pour." Documented in 1860s Kyiv cookbooks (Olga Franko, Zinoviya Klynovetska) as urban-gentry breakfast food that filtered down to farmhouse Sunday tables by 1900.
Olga Franko's 1929 Persha Ukrainska Zahalno-Praktychna Kukhnia gives the canonical proportion: 250g syr per 8 pancakes, plus 1 egg yolk and 30g raisins for sweet version. Soviet-era cafeteria standard (GOST) deviated by adding sugar to the batter — village kitchens never did.
Golden-pale rolls in a shallow pool of cream that has thickened and slightly browned around the edges. Pancake yields immediately to the fork; warm cheese filling is barely sweet, tangy from the syr. Sour cream pool turns into a sauce when stirred.
Farmer cheese (syr, not cream cheese) must be drained 4 hours minimum in cheesecloth — wet syr makes the rolls soggy. Pancakes are pan-fried, not griddled; the slight browning matters. Final bake at 180°C for 15 minutes lets the cream reduce by a third.
Variations
Galician sweet version adds raisins and cinnamon to the syr. Bukovyna savory version uses mashed potato and dill instead of cheese. Kyiv chef Klopotenko makes a contemporary version with cottage cheese and smoked plum at 100 Rokiv Tomu Vpered.
