Faluda travelled from Persia through Mughal India to Sri Lanka, where the island's Muslim community made it a beloved treat for Ramadan and beyond. Served tall and theatrical in clear glasses, its rose-pink layers and jelly bring a festive sweetness to hot afternoons across the country.

Cool, creamy and floral, with rose perfume rising over sweet milk. The slippery vermicelli, jelly cubes and popping basil seeds give a playful tangle of textures in every sip.

Basil seeds absorb water to form a gelatinous coat that suspends through the drink rather than sinking, giving the signature texture. Layering syrup, seeds and milk separately keeps the colours distinct until stirred.

    Soak the basil seeds in water until swollen and jelly-coated.

    Watch out

    Soak the basil seeds until each one swells and wears a clear jelly coat — under-soaked they sink and feel gritty instead of suspending through the drink.

    Boil the vermicelli until soft, then drain and rinse in cold water.

    Watch out

    Rinse the boiled vermicelli in cold water right after draining — it stops the cooking and washes off starch so the strands stay separate, not gummy.

    Cut prepared jelly into small cubes and chill.

    Drizzle rose syrup around the inside of each tall glass.

    Spoon in a layer of soaked basil seeds and a layer of vermicelli.

    Watch out

    Spoon the layers in gently against the glass so they stay distinct — stir too soon and the pretty rose, seed and milk bands muddy into one colour.
