Thadal is a traditional Sindhi cooling drink, served at weddings, festivals and during the intense summer heat of Sindh (where temperatures regularly exceed 45 degrees). It is made from almonds, poppy seeds (khas khas), fennel seeds, cardamom and a little sugar, soaked, ground to a fine paste, and mixed with cold milk and water. The poppy seeds give a distinctive cooling quality and a slightly nutty, milky texture, while the almonds and cardamom provide richness and aroma. Thadal is served ice-cold in tall glasses, sometimes with a scoop of ice cream on top at modern weddings, and it is one of the most refreshing drinks in the Sindhi repertoire. The drink is also associated with pre-wedding Sindhi ceremonies, where it is served to guests.

Ice-cold, milky, nutty and faintly sweet, with a cooling quality from the poppy seeds that is genuinely refreshing in extreme heat. The cardamom adds fragrance, the almonds body. Each sip is soothing and cooling.

The technique is soaking, grinding and chilling. Almonds (100g) are soaked overnight and peeled. Poppy seeds (50g), fennel seeds (1 tsp) and 4 cardamom pods are soaked in warm water for 2 hours. All the soaked ingredients are ground in a blender with a little water until very smooth, then strained through muslin. The strained liquid is mixed with cold milk (about 500ml), sugar to taste, and ice. The soaking and the fine grinding are essential; the poppy seeds must be completely broken down to release their cooling compounds. The drink is served immediately, ice-cold.

Variations

Some add pistachios or rose water. A richer version uses cream instead of milk.

    Soak 100g almonds overnight; peel. Soak 50g poppy seeds, 1 tsp fennel seeds and 4 cardamom pods in warm water for 2 hours.

    Watch out

    Grind the soaked seeds until fully smooth, then strain — the poppy seeds must break down completely or the drink turns gritty.
