Murgh methi is a Punjabi home-cooking classic, chicken curry flavoured with kasuri methi (dried fenugreek leaves from the Kasur region of Punjab). The fenugreek leaves give the dish a distinctive bitter-herbal aroma that cuts through the richness of the chicken and the gravy, a flavour no other spice can replicate. The chicken is cooked in a standard onion-tomato-ginger-garlic base with turmeric, coriander and red chili, but the kasuri methi is the defining ingredient, crumbled and stirred in toward the end of cooking. The dish is everyday home food, not a restaurant or celebration dish, eaten with roti or rice for lunch or dinner across Punjab.

A deeply savoury chicken curry with a bitter-herbal perfume from the fenugreek that lingers on the palate, the gravy coating the tender chicken pieces. Each bite is complex: savoury, slightly bitter, warm with spice.

The technique is a standard curry base with fenugreek added late. Chicken pieces are browned, then onions are fried golden, ginger-garlic paste and powdered spices (turmeric, coriander, red chili) added, then tomatoes. The chicken is simmered in its own juices and the tomato-onion base for 20 minutes until tender. Kasuri methi (about 2 tablespoons dried) is crumbled between the palms and stirred in during the last 5 minutes, off the heat or on very low heat to preserve its volatile aroma. The fenugreek's essential oils are easily destroyed by prolonged cooking, so it must be added at the end. The dish is finished with a tarka of more kasuri methi in hot ghee poured on top.

Variations

Some use fresh fenugreek leaves instead of dried. A version with cream is richer.

    Brown 1kg chicken pieces in 4 tbsp oil; remove.

    Fry 2 sliced onions until golden; add 1 tbsp ginger-garlic paste, 1 tsp each turmeric, coriander, chili powder.

    Add 3 chopped tomatoes; cook until soft; return the chicken.

    Simmer covered 20 minutes until the chicken is tender.

    Crumble 2 tbsp kasuri methi between palms; stir in; cook 3 minutes off the heat.

    Watch out

    Crumble the kasuri methi in your palms and add it in the last few minutes off the heat — its aroma is volatile and long cooking kills it.

    Make tarka: 1 tbsp ghee with 1 tsp more kasuri methi; pour on top. Serve with roti.
