Milan's signature hollow bread roll, shaped like a five-petaled rose, entirely void of crumb — the result of Milanese bakers deliberately hollowing out the Austrian kaisersemmel to keep the crust crisp in the city's humid air. A long biga ferment, high-gluten flour, and a steam-injected 250 °C bake combine to produce its trademark puffed, glassy shell.
Following the 1713 Treaty of Utrecht, Lombardy passed to Habsburg Austria and Austrian officials arriving in Milan brought the kaisersemmel, a compact Viennese roll. Milan's humid climate turned the imported bread gummy by evening, so local prestinai (bakers) hollowed out the crumb entirely, creating a moisture-resistant roll they called michetta — a diminutive of micca, from Latin mica (crumb), the very element now absent. Post-World War II, American-introduced Manitoba high-protein flour gave bakers the gluten strength needed for a reliably hollow structure. In 2007, the City of Milan granted michetta Denominazione Comunale (De.Co.) status.

A biga pre-ferment (18-20 hours at 12 °C) develops complex organic acids and an extensible gluten network. Shaped rolls bake at 250 °C with heavy steam injection: steam gelatinizes the outer starch layer instantly, forming a smooth, expandable skin that maximises oven spring. Interior moisture flashes to steam, CO₂ from fermentation expands the cavity, and the soft crumb structure — weakened by the stamped mold — collapses inward. Steam is then vented; dry heat drives Maillard browning across the shell, generating pyrazines and furans that lock into a glassy, crackling crust resistant to ambient humidity.
Variations
Some bakeries add a small amount of lard (strutto) to the final dough for extra shatter and shelf life. A softer mezza michetta retains more interior crumb. Contemporary Milanese artisan bakers have revived stone-ground flours and natural sourdough leavening in place of commercial yeast.
