Badrijani Nigvzit ('eggplant with walnut') is the appetizer that defines Georgian dining for foreigners — pan-fried eggplant slices wrapped around a walnut-garlic-blue-fenugreek paste, served cold with pomegranate seeds scattered across the top for the visual flourish. Universal across Georgia but most associated with Kakheti's wine tradition, where it accompanies a glass of Rkatsiteli or Saperavi.
Soft fried-eggplant strips rolled around walnut paste that's been pulsed with garlic, vinegar, and blue fenugreek. Pomegranate seeds on top. Cold; eaten as a starter, almost always.
Frying eggplant softens it without releasing too much oil if you salt-and-drain first — then the slice can wrap tightly around the walnut paste without breaking. Walnut oil emulsifies with vinegar into a stable filling that won't separate at room temperature.
Variations
Some western Mingrelian versions add ajika chili to the walnut paste for heat; the Kakhetian eastern table keeps it pure-savory — west spicier, east sober.
