Kakheti is wine country — the eastern Georgian plateau where the Saperavi and Rkatsiteli grapes have been pressed into qvevri (clay amphorae buried in the earth) for about 8,000 years. The cuisine here doesn't fight the wine; it serves it. Mtsvadi skewers are grilled over the dried vine cuttings left after pruning. Saperavi makes its way into braising liquid for beef. Churchkhela — strings of walnuts dipped in thickened grape must — was originally a way to use up the leftover juice after fermentation. Almost every dish here has either grilled meat or a glass of red within reach.

The other half of the Kakhetian story is the dumpling. Khinkali, the hand-twisted soup dumplings with peppery broth trapped inside, are technically a mountain dish from the Khevsureti and Tusheti ranges just north of Kakheti, but they've been claimed by Kakhetian tables and absorbed into the regional identity. Eat one wrong and the soup runs down your wrist — the proper grip is by the top knot, which you leave on the plate. Kakhetian meals tend to be long, loud, and overseen by a toastmaster (tamada) who pours and pours and pours.
