Mie Aceh

Acehnese·Medium·25 min

Thick yellow noodles from Aceh stir-fried or simmered in a fiery, fragrant curry spice paste with beef or seafood, reflecting Indian, Arab and Chinese trade influences.

Originates from Aceh in northern Sumatra, shaped by the Aceh Sultanate's spice-trading history.

Springy noodles slick with curry oil deliver waves of cumin, cardamom and chili heat that build with every forkful. Tender beef and sweet shrimp punctuate the dish, while emping crackers add a bitter-crisp crunch.

Frying the spice paste until the oil separates blooms the fat-soluble aromatics, coating each noodle strand so the curry flavor clings rather than washing off.

Variations

Mie Aceh goreng (dry-fried), goreng basah (semi-wet), mie kuah (full soup), with kepiting (crab) or daging (beef)

How it's made

7 steps · 25 min

  1. 1
    10 min

Grind shallots, garlic, chili, cumin, cardamom and turmeric into a curry paste.

  2. 2
    5 min

Saute the spice paste in oil until deeply fragrant and the oil separates.

    Watch out

Fry the spice paste until the oil visibly splits out and it smells deeply fragrant — that oil-break is the signal the raw edge is gone.

  3. 3
    4 min

Add sliced beef or shrimp and stir-fry until just cooked through.

    Watch out

Take the beef or shrimp off the heat the moment it's just cooked — it'll keep cooking with the noodles, and overdone it turns tough.

  4. 4
    3 min

Toss in tomato, bean sprouts and chopped greens to soften slightly.

  5. 5
    2 min

Add the thick yellow noodles with a splash of broth and soy sauce.

  6. 6
    5 min

Stir-fry over high heat (or add more broth for the soupy goreng-basah version).

    Watch out

Keep the flame high and the wok moving so the noodles catch a little char and stay springy — low heat leaves them wet and clumped.

  7. 7
    2 min

Finish with fried shallots, emping crackers, pickle and a wedge of lime.
