
Bite-sized cubes of pork pan-fried with crisp potatoes, lots of garlic, and marjoram until everything turns glossy and golden. A pub and home-kitchen staple, eaten with pickles.
Despite its name pointing to Brasov in Transylvania, this dish was almost certainly born in mid-20th-century Budapest. The most-repeated story credits Nandor Grof, head chef of the Hungarian State Railways, who is said to have devised it in 1948 for the dining car of the Budapest-Brasov line, lending a humble fry-up a romantic, faraway name.
Crisp-edged potatoes give way to juicy, deeply browned pork, every cube carrying the warm, slightly piney perfume of marjoram and a real hit of garlic. A sharp pickle cuts the richness perfectly.
Searing the small cubes builds a Maillard crust, while a brief covered braise keeps the lean pork tender; frying the potatoes separately stops them going soggy so they stay crisp when finally tossed in.
