Turogomboc sits at the crossroads of two traditions: Hungary's deep love of turo, the fresh curd cheese woven through its cooking, and the Central European fondness for boiled dumplings inherited from Czech and German kitchens. It became a cherished home dessert and a comforting main course on meatless days.

Soft and just slightly tangy inside, with a sweet, nutty crunch of buttery breadcrumbs outside and a cool, sour cream finish. Light enough to feel like a treat, rich enough to be supper.

Resting lets the semolina absorb moisture and bind the soft curd so the dumplings hold together; a bare simmer rather than a boil keeps them from breaking apart while they set and puff.

    Mash the curd until no lumps remain before the eggs go in — any pea-sized bits become weak spots where dumplings split.
