A laminated sesame flatbread from Fuping County in Shaanxi's Weinan region, made by repeatedly folding spiced lard into wheat dough to build dozens of paper-thin layers. Pressed with black and white sesame and glazed with honey before baking in a wood-charcoal kiln, it emerges shatter-crisp on the outside and tender-layered within.
The cake traces its origin to the reign of Emperor Wen of the Western Han dynasty (r. 180–157 BCE). According to local records including the Fuping County Annals, Emperor Wen's mother Empress Dowager Bo frequently brought the young prince to Huaideِ County (present-day Huayang, Huazhu Township, Fuping County) to visit her own mother, the Lady of the Lingwen Marquisate, who had her garden retreat there. Imperial bakers accompanying the entourage are said to have taught local villagers to make this layered oven cake, which took root in the village and came to be known as the 'Empress Dowager's Cake.' The cake-making technique is inscribed on the Shaanxi Province Second Batch of Intangible Cultural Heritage.

The honey glaze applied to the surface is rich in fructose, which begins the Maillard reaction at roughly 110°C—lower than sucrose—so the surface browns rapidly into a deep amber shell covered with volatile aromatic compounds including hydroxymethylfurfural, imparting that distinctive sweet-toasty fragrance well before the interior has dried out.
Variations
A sweet variant layers red-bean paste or date purée between the folds instead of spiced lard. Modern home bakers substitute a convection oven (200°C) for the traditional three-tiered charcoal kiln, with good results. For weddings and ancestral ceremonies in Fuping, bakers prepare a large ritual version about 20cm in diameter, presented as a gift to neighbours and called a 'gift cake'.
