Daouqieh — also called Fistqiya, 'the pistachio one' — is a cream-and-pistachio sweet of the Lebanese mountain tradition, recorded in Arabic-language sources as part of the Lebanese sweets repertoire. It belongs to the same knafeh-and-cream family as halawet el jibn and znoud el sit, but it is the most pistachio-forward of the three: ground pistachio is folded into the base alongside the toasted knafeh pastry, not merely scattered on top, giving the dessert its green-flecked color and deep nutty flavor. It is a specialty of Mount-Lebanon patisseries rather than a home dish, demanding the fine-ground pistachio and pressed shell that home cooks rarely attempt.

The toasted knafeh strands give a delicate shattering crunch and a brown-butter note; the pistachio layer is dense, sweet and intensely green-nutty; the cold ashta cuts through with a clean milky coolness.

Toasting the knafeh frik drives Maillard browning on the thin starch strands, building the nutty aroma and brittle texture; this step cannot be skipped or the base tastes raw and starchy. The ground pistachio binds with hot sugar syrup into a moldable mass — pistachio's own oil and protein act as the binder, which is why the shell holds without flour or egg. Pressing it warm into rings sets it into a crisp shell as it cools. The cold ashta inside, stabilized by cornstarch-thickened milk proteins, provides the temperature contrast that makes the rich shell tolerable.

Variations

Some versions layer the pistachio-frik mix and ashta in a shallow tray and cut squares instead of shaping individual rounds. A few add a whisper of cardamom to the pistachio.

    Toast 300 g knafeh frik in a dry pan over medium heat, tossing, until uniformly golden and fragrant, about 5-7 minutes; set aside.

    Watch out

    Toast the frik to even gold and nutty-fragrant — skip this and the base tastes raw and starchy.

    Make syrup: dissolve 1.5 cups sugar in 1 cup water with 1 tsp lemon juice; simmer 8 minutes; off heat stir in 1 tsp orange blossom water; keep warm.

    In a bowl combine the toasted frik with 1.5 cups finely ground pistachio and 3 tbsp sugar; pour in enough warm syrup to bind it into a moldable mass when pressed.

    Watch out

    Add just enough warm syrup to bind — press a handful and it should hold; too much syrup and the shell won't set crisp.

    Line small tart rings or a muffin tin with cling film; press a layer of the pistachio-frik mix firmly into the base and up the sides to form a shell; chill 20 minutes to set.
