Makran fish roast is the daily food of the coastal fishing communities along the Makran coast of Balochistan, from Gwadar to Pasni. The fishermen of the Arabian Sea catch mackerel, pomfret or snapper daily, and cook it on the beach over coals made from driftwood, the only fuel available in this arid coastline. The fish is simply cleaned, rubbed with salt and a little turmeric, and grilled whole over the coals until the skin chars and the flesh flakes, then eaten with lime and flatbread. The simplicity is dictated by the environment: no elaborate spice markets, no vegetables, just fish, salt, fire and bread. The dish is documented in coastal food studies of Gwadar and the Makran region, and it represents the most basic and most ancient form of coastal cooking in Balochistan.

Charred, smoky, intensely fishy whole fish with crisp skin and soft, flaky flesh, seasoned only with salt and a squeeze of sharp lime. Eaten on the beach, the taste of salt air and charcoal in every bite.

The technique is a simple whole-fish grill over charcoal. The fish (mackerel, pomfret or snapper, 500g to 1kg) is cleaned, scaled and gutted, the cavity filled with a slice of onion and lime. It is rubbed with salt, a little turmeric and oil, and grilled over moderate coals for 7 to 10 minutes per side, until the skin is charred and blisters and the flesh flakes when tested with a fork. The fish must be fresh, caught the same day. No elaborate spice paste, no marinade beyond salt and turmeric; the Makran coast provides fish and fire, and the dish relies entirely on their quality. Eaten by hand, the flesh pulled from the bones, with flatbread and lime.

Variations

Some stuff the cavity with green chilies. A version with garlic paste is modern.

    Watch out
