Hanini is a traditional Najdi dessert of mashed dates cooked with crumbled whole-wheat bread and ghee until caramelised into a dark, sweet, dense paste. It is often served warm in winter, a pure expression of the two staple Najdi ingredients, dates and ghee. The dish is a family dessert of the central region, where the date harvest is central to the economy, and the long cooking caramelises the date sugars into a deep, almost treacly richness.

Dark, dense, intensely sweet and date-forward, with a caramelised, almost burnt-sugar depth, the bread giving body, the ghee a rich warmth. Eaten warm in small spoonfuls, it is the concentrated sweetness of the Najdi date harvest.

Pitted dates are mashed and cooked long and slow with crumbled bread and a generous amount of ghee, during which the date sugars caramelise and the bread absorbs the date paste, forming a cohesive, dark mass. Cardamom is the only spice. The long cooking is essential; the sugars must darken and deepen. The ratio of dates to bread determines whether it is a paste or a more textured pudding.

Variations

A richer version adds more ghee. Some add a little sugar for extra sweetness.
