The Idea
Field corn is a stubborn food. Ground dry, it makes a meal that only crumbles; eaten plain as a staple, it slowly starves you of vitamins it holds but will not surrender. Somewhere in early Mesoamerica, cooks found the key — simmer the kernels in water made alkaline with slaked lime or the ash of the hearth, then let them steep. The hulls loosen and rinse away, the grain softens, and something new is born: nixtamal.
The genius is that a single alkaline soak solves several problems at once. It peels the corn, it remakes it into a dough that finally holds together, it mints the deep toasted-corn aroma of a fresh tortilla — and, invisibly, it changes the grain's chemistry so the body can use what the corn was hoarding. The word itself carries the method: from the Nahuatl nextli, "ashes," and tamalli, the corn dough. Ashes and dough — the whole idea in two syllables.
Nothing shows the stakes like where the technique did not travel. When maize crossed the ocean after 1492, it went as seed, not as knowledge; Europe and the American South grew it and ate it plain. What followed was pellagra — the wasting niacin-deficiency disease of corn-fed poverty — a plague that never touched the tortilla-eating peoples who had carried the lime along with the grain for three thousand years.
The lime does more than clean the corn. It unlocks a nourishment the grain would otherwise take to the grave — which is why the peoples who kept the ash never knew the disease that stalked the ones who dropped it.

What's Happening
Alkali is the whole engine. Raised to pH 11–12, the lime water attacks the cements of the kernel's outer skin — dissolving the arabinoxylan and hemicellulose that glue the pericarp on — so the tough hull sloughs and rinses away, and the starch inside begins to gelatinize. Those loosened polysaccharides don't just leave; together with the swollen starch they become natural hydrocolloids, water-holding gums that give masa its supple, workable body. Meanwhile the calcium itself soaks in, cross-linking the corn's own proteins and starch where gluten cannot, so a grain that would only crumble now presses into a dough that holds.
The nutrition shifts in the same bath. The alkaline cook improves the availability of the corn's niacin and its amino acids — the reason maize eaten with lime spares the eater the pellagra that plain cornmeal invites — while the steep drives calcium deep into the grain, lifting its calcium content many times over. And chemistry writes the flavor, too: the high pH spins off aroma compounds, chief among them 2-aminoacetophenone, that carry the unmistakable scent of a fresh tortilla — a smell raw ground corn can never make.
