Mtabga is a hallmark of southern Tunisia, closely associated with Gafsa—a crossroads city between Algeria, Tunis, and Sfax that served as a key junction in trans-Saharan trade for centuries. The name derives from the Arabic root meaning 'to layer' or 'to fold' (tabaq), reflecting the dish's defining fold. Closely related preparations appear in Algerian oasis towns near Biskra, suggesting a shared Saharan trade-route culinary heritage. The traditional version calls for ch'ham (sheep tail fat) in the filling; modern urban recipes substitute vegetable oil.

The exterior crust crackles under pressure; the soft dough yields to a pungent filling of sweet caramelized onion, tomato acidity, and harissa burn layered with the earthy warmth of caraway and coriander.
