Yeshimbra asa is a classic Ethiopian fasting-day innovation. When real fish is forbidden (over 200 days per year in the Orthodox calendar), chickpea flour dough is shaped into fish-like pieces, fried, and simmered in berbere sauce. The name literally means 'chickpea fish' — a humorous acknowledgment of the substitute.

Firm, chewy pieces of fried chickpea dough in a spicy red berbere sauce. The pieces have a satisfying bite (not flaky like real fish, but pleasantly firm); the sauce is fiery and complex. A creative and convincing meat substitute.

Chickpea flour dough is high in protein and starch. When fried, the exterior sets into a firm crust (Maillard browning) while the interior stays chewy. Simmering in berbere sauce allows the pieces to absorb flavor — chickpea flour is a good flavor carrier because of its porous structure.
