Black beans (frijoles negros) are the foundational ingredient of Cuban cuisine. The potaje (stew) method — long simmering with a sofrito base — produces a thick, flavorful bean dish that can be served as soup, as a side, or mixed with rice. Every Cuban household has a pot of beans simmering.
